自制蛋豆腐
材料:
1000ml浓豆浆
5粒蛋白
3粒蛋黄
1/2小匙盐
少许胡椒粉和鸡晶粉
做法:
1. 将全部材料拌匀过滤.
2. 倒入已铺上保鲜纸的8寸/20cm方盆里.
3. 煮滚蒸笼水, 放进蒸笼小火蒸20分钟至凝固即可取出.
Homemade Egg Bean Curd
Ingredients:
1000ml plain soya bean milk
5 egg whites
3 egg yolks
1/2 tsp salt
Dash of pepper and chicken stock granules to taste
Method:
1. Combine all ingredients, mix well and strain.
2. Line a 8"/20cm square tray with plastic wrapper and pour in mixture.
3. Bring water to boil, lower the heat and steam for 20 minutes or until
set. Remove. |

葱油豆腐
材料:
1 块水豆腐 或自制蛋豆腐
2大匙油, 3粒葱头仔, 切片
1大匙青葱粒, 1大匙炸脆虾米
调味料:
1大匙蚝油, 1大匙生抽
1/2小匙黑酱油
少许鸡晶粉, 100ml水
做法:
1. 豆腐放进蒸笼里大火蒸5分钟, 取出倒掉水分.
2. 烧热2大匙油, 爆香葱头仔淋在豆腐上.
3. 倒入调味料煮滚, 淋在豆腐上, 再将青葱粒和脆虾米洒上便可享用.
Bean Curd With Shallot Oil
Ingredients:
1 piece of soft bean curd or homemade egg bean curd
2 tbsp oil, 3 shallots, sliced
2 tbsp chopped spring onion
1 tbsp fried dried prawns
Seasoning:
1 tbsp oyster sauce
1 tbsp light soya sauce
1/2 tsp dark soya sauce
dash of chicken stock granules
100ml water
Method:
1. Steam bean curd at high heat for 5 minutes. Remove and pour away excess
water.
2. Heat up 2 tbsp oil, saute sliced shallots until fragrant. Pour shallots
and oil over bean curd.
3. Pour seasoning into wok and bring to boil. Pour over bean curd, sprinkle
chopped spring onion, fried dried prawns on top and serve. |

广府鱼
材料A:
1 条鱼 (约600g), 洗净
1小匙粟粉
3杯炸油
1小匙蒜茸
5片姜
100ml水
材料B:
50g肉丝
50g甜豆
1块炸豆腐, 切块
50g红萝卜
调味料:
1大匙蚝油
1大匙生抽
少许麻油和胡椒粉
1粒蛋, 打散
1大匙粟粉水, 打芡用
做法:
1. 鱼沾上粟粉, 放进热油中炸至金黄色, 捞起沥干油份.
2. 烧热1大匙油, 爆香蒜茸和姜片,加入水和材料B煮至熟, 打芡和加入蛋液煮滚,
淋上鱼身上便可享用.
Kung Fu Fish
Ingredients A:
1 fish (about 600g), cleaned
1 tsp corn flour, for coating
3 cups oil for deep-frying
1 tsp chopped garlic
5 slices ginger
100ml water
Ingredients B:
50g shredded pork
50g honey beans
1 block fried bean curd, cubed
60g sliced carrot
Seasoning:
1 tbsp oyster sauce
1 tbsp light soya sauce
dash of sesame oil and pepper
1 egg, beaten
1 tbsp corn flour water, for thickening
Method:
1. Coat fish with corn flour and deep-fry in hot oil until golden brown
and cooked. Dish and drain.
2. Heat up 1 tbsp oil, saute chopped garlic and ginger until fragrant. Add
in water, ingredients B and bring to boil. Thicken with corn flour water,
add in egg and bring to boil, pour over fish. Serve hot. |

材料:
2大匙油
1/2大匙蒜茸
2块腐乳
2小匙指天椒碎
500g油麦
调味料:
1小匙蚝油
1/2小匙糖
1/2大匙生抽
做法:
1. 烧热油, 爆香蒜茸, 加入腐乳和指天椒炒匀.
2. 加入油麦和调味料大火炒至熟便可.
Yao Mak With Fermented Bean Curd
Ingredients:
2 tbsp oil
1/2 tbsp chopped garlic
2 pieces fermented bean curd
1 tsp chopped chilli padi
500g yao mak (baby romanien lettuce)
Seasoning:
1 tsp oyster sauce
1/2 tsp sugar
1/2 tbsp light soya sauce
Method:
1. Heat up oil, saute chopped garlic until fragrant. Add in fermented bean
curd, chilli padi and stir well.
2. Add in yao mak, seasoning and stir-fry at high heat until cooked. Dish
up and serve hot. |

来来来,我教大家煮我妈妈最拿手的客家炸肉..首先来做这个客家南乳酱.这道菜好不好吃是全靠这个酱的哟, 大家都一定要学会,知道吗??
