大约3-4人份的。你家人比较少,就放少一点料罗。。其实料是自己喜欢的啦,你要
放其它的海鲜也可以啊。。试煮了之后记得上来跟大家分享噢!! |

东坡肉
材料:
600g五花肉
1 大匙生抽
3 杯炸油
2 棵青葱
5 片姜
1 粒八角
300ml水
调味料:
3 大匙糖
5 大匙生抽
150ml 绍兴酒
100g烫熟小白菜
1 大匙粟粉水, 打芡用
做法:
1. 五花肉放进滚水中煮至半熟, 捞起, 加入生抽拌匀腌10分钟, 然后放进油锅里大
火炸至金黄色, 捞起沥干油分.
2. 将花肉和其余材料及调味料拌匀, 放进大碗中, 用保鲜纸封好, 然后放进蒸笼里
大火蒸3小时至肉酥烂, 待冷切块.
3. 将烫熟的小白菜铺底, 排上东坡肉, 然后将汁倒回锅里煮滚, 打芡淋上即可享用.
Dong Bo Pork Belly
Ingredients:
600g pork belly
1 tbsp light soya sauce
3 cups oil for deep-frying
2 stalks spring onion
5 slices anise
1 star anise
300ml water
Seasoning:
3 tbsp sugar
5 tbsp light soya sauce
150ml shaoxing wine
100g blanched xiao bai cai / green vegetables
1 tbsp corn flour water for thickening
Method:
1. Blanch pork belly in boiling water until half cooked. Dish up. Rub all
over with light soya sauce and marinate for 10 minutes. Deep-fry in hot
oil until golden brown. Dish and drain.
2. Arrange fried pork belly, the remaining ingredients and seasoning onto
a steaming bowl. Seal well with heat proof plastic wrapper and steam at
high heat for 3 hours until pork belly is tender. Remove and leave to cool
before cutting into slices.
3. Arrange xiao bai cai onto a serving platter and top with dong bo pork
belly. Reheat the gravy and thicken with corn flour water. Pour over pork
belly and serve hot. |

日式蒜泥沾酱
材料:
150ml生抽
1小匙糖
50ml水
2大匙蒜泥
做法:生抽,糖和水小火煮滚,取出待冷,加入蒜泥便可.
注: 蒜头须磨得很烂, 做成的沾酱才够出味又好吃.
Minced Garlic Dipping Sauce
Ingredients:
150ml light soya sauce
1 tsp sugar
50ml water
2 tbsp minced garlic
Method:
Bring light soya sauce, sugar, water to cook until boiled. Remove from heat
and leave to cool. Add in minced garlic and mix well.
这道蒜泥沾酱中的蒜泥是不经煮滚, 生蒜除了有更浓烈的香气之外, 它也有更良好
的防癌杀菌功效, 加热会使蒜中的大蒜素破坏, 具有杀菌作用的大蒜素就不能形成

沾酱适合 用来作为白斩鸡, 白灼肉片, 火锅等沾酱, 十分醒胃 |

姜茸青葱沾酱
材料:
200g嫩姜, 去皮, 切小块, 加入100ml水, 打烂成泥
100ml油
2大匙青葱粒
调味料:
1小匙鸡精粉
1小匙盐
少许麻油
做法:烧热油, 倒入姜茸和调味料搅煮至滚, 再加入青葱粒拌匀便可, 离火待冷.
注: 嫩姜须磨得很烂, 做成的沾酱才够出味又好吃.

Ingredients:
200g young ginger, peeled, diced, mixed with 100ml water and blended into
puree
100ml oil
2 tbsp chopped spring onion
Seasoning:
1 tsp chicken stock granules
1 tsp salt
a little sesame oil
Method:
Heat hot oil and put in ginger puree and seasoning. Stir and cook until
boiled. Add in chopped spring onion, stir well and remove from heat. Leave
to cool before storing.
沾酱适合用来沾白斩鸡外, 也适合用来蒸鱼, 即是蒸好鱼之后,再淋上酱汁, 可再
加少许麻油以增添香气. |

越南鱼露沾酱
材料:
100ml鱼露
1大匙蒜头碎
3粒葱头仔, 切片
5条红辣椒, 切碎
2大匙酸柑汁
1大匙幼糖
100ml冷开水
做法:将全部的材料用大腕盛起拌至糖溶解便可.
Vietnamese Dipping Sauce
Ingredients:
100ml fish sauce
1 tbsp chopped garlic
3 shallots, peeled and sliced
5 red chillies, chopped
2 tbsp lime juice
1 tbsp caster sugar
100ml cold boiled water
Method:
Combine all ingredients and mix until sugar has dissolved.
沾酱适合 用来沾越南生春卷, 炸春卷, 凉拌蔬菜, 海鲜等 |

泰式美奶滋酱
材料:
6大匙美奶滋
1/2大匙酸柑汁
1小匙幼糖
1小匙咖哩粉
1小匙疯柑叶碎
1小匙香茅碎
1/2小匙指天椒碎
做法:将全部的材料拌匀便可
Thai Lemongrass Creamy Dipping Sauce
Ingredients:
6 tbsp mayonnaise
1/2 tbsp line juice
1 tsp caster sugar
1 tsp curry powder
1 tsp chopped kafir
lime leaves
1 tsp chopped lemongrass
1/2 tsp chopped chilli padi
Method:
Put all ingredients in a mixing bowl and mix until well-combined.
沾酱适合 用来沾泰式鱼饼, 炸虾球, 炸豆腐, 炸鸡块等都很合适 |

材料:
5粒葱头仔, 去皮, 切片
1小匙指天椒碎
2大匙桔子汁
5大匙生抽
1小匙糖
做法:将全部的材料拌匀便可.
Grilled Fish Dipping Sauce
Ingredients:
5 shallots, peeled and sliced
1 tsp chopped chilli padi
2 tbsp lime juice
5 tbsp light soya sauce
Method:
Combine all ingredients and mix well.
沾酱适合 用来沾蕉叶烧鱼外, 如果在家做BBQ, 有烤螃蟹,虾,苏冬等等话, 也可以
用这个酱来配搭. |

贡糖辣椒酱
材料:
200ml泰式辣椒酱或甜辣椒酱
5块花生贡糖, 压碎
做法:
将泰式辣椒酱和花生贡糖拌匀便可.
Peanut Candy Chilli Dipping Sauce
Ingredients:
200ml Thai sweet chilli sauce
5 pieces peanut candy, crushed
Method:
Combine Thai sweet chilli sauce, peanut candy and mix well.
沾酱适合 用来沾五香肉卷, 蟹枣外,也适合作为 罗杂酱, 用来点青芒果,黄梨,青瓜

马来栈辣酱
材料:
100g红辣椒
50g指天椒
50g烘香马来栈
3大匙桔子汁
1小匙糖
做法:
将红辣椒,指天椒和马来栈舂烂, 加入桔子汁和糖拌匀便可享用.
Sambal Belachan
Ingredients:
100g fresh red chillies
50g chilli padi
50g belachan, toasted
3 tbsp calamansi lime juice
1 tsp sugar
Method:
Pound the chilli, chilli padi and belachan together to the desired consistency.
Mix with lime juice and sugar before serving
此酱通常是用来当豆角, 四瓣豆, 黄瓜等沾酱. |
