Havent got time to touch up my itinerary, but just cut my tasmania portion for you. Hopefully can help.
Overall, i would prefer launceston more than hobart, feel more relax and peacefull on Launceston. If you love quiet place and scenes, you may choose stay longer in launceston.

Day 1 [ Wednesday ]
10.00am         Reach Hobart and pick up car from rental company
10.30am         Reach Barilla Bay Oyster Farm taste Oyster, Walk to Candy AB for abalone
11.30am         Depart to Coles Sorell Supermarket for snack hunting.
12.00pm         Depart to Sorell Fruit Farm, for fruits picking - Cherries
                174 Pawleena Road, Sorell TAS 7172, Australia

1.00pm         Depart to Bonorong Wildlife Park below
                Bonorong Wildlife Sanctuary, 593 Briggs Road, Brighton TAS 7030, Australia [ To       see Devil ]
        -         2pm has feeding tour, be there early and inform the staff to join the tour

3.30pm         Depart to Lauceston
6.00pm         Reach Lauceston, drive around to take away dinner, head towards hotel for Check In

Day 2  [ Thursday ]
7.00am         Breakfast in Launceston, grab some food for Mountain Walk
7.30am        Depart to Cradle Mountain (Suggest to focus on cradle mountain whole day)
9.30am         Reach Cradle Mountain, get information from visitor centre for route
        -         cradle mountain enchanted walk (20mins)
        -         Dove Lake Loop Walk (1-2hrs)
                Lunch nearby
1.30pm         Depart to Table Cape Tulip Farm (Too Rush, you can skip)
Table Cape Tulip Farm, 363 Table Cape Road, Table Cape TAS 7325, Australia
3.00pm         Reach Table Cape Tulip Farm  (Too Rush, you can skip)
3.30pm         Depart to Penguin  (Too Rush, you can skip)
4.30pm         Reach Penguin  (Too Rush, you can skip)
5.00pm         Return to Lauceston
6.30pm         Reach Lauceston, Take away dinner, and back hotel

Day 3  [ Friday ]
6.30am         Check out and breakfast in Launceston, Depart to Bay of Fires
9.15am         Reach Bay of Fires
9.45am         Depart to Bicheno
11.00am         Reach Bicheno
        -         Bicheno Blowhole
12.00am         Depart to Frecinet Marine Farm for lunch (Oyster lunch)
1.00pm        Depart to Freycinet National Park, buy entrance ticket
        -         Hiking > Wineglass bay lookout circuit (1.5 hrs return)
** i leave the national park quite late, the road was dark and curvy. Suggest you fill up your fuel after Bicheno, and leave National Park early before 4pm.

3.00pm         Depart to Hobart Waterfront Lodge Motel (Clean and quiet)

5.30pm         Reach Motel, check in, walk around for food, back to hotel

Day 4 [ Saturday ]
8.00am         Salamanca Market
-         Breakfast

2.00pm         Depart to Willie Smith's Apple Shed
Free and Easy
Dinner and back to hotel

Day 5  [ Sunday ]
7.30am         Check out hotel, depart to Farm Gate Market [You may skip this one, Salamanca is much better than this]
9.30am         Depart to Airport, Return Car, Luggage Check in
